The Culinary Center of Monterey opened February 2001. Since then, its classes have gained recognition across the country. In January 2005, Culinary Center of Monterey received state certification for their 12-month
Culinary Arts program. Students receive training from Executive Chefs and have the opportunity to work on prominent events, including AT&T at Pebble Beach, The Concours d'
Elegance, Master of Food & Wine, and Cooking for Solutions.
Culinary Center of Monterey's culinary
certificate program gives students the knowledge and skills for a rewarding career in the culinary industry. Students learn the latest innovations and master-recognized traditions as well as develop their own style as a chef. Courses teach theory and practice, food safety, techniques of classical French cooking, and the realities of the restaurant
business with hands on experience at establishments throughout Monterey. The Culinary Center's accelerated curriculum also teaches students to find and keep employment as well as how to be successful in the challenging and ever changing field.

Culinary Center of Monterey has no more than 12 students per instructor and no more than 48 students per session.
The Culinary Center offers several job placement services to its graduates. The school also alerts local and regional employers of each graduating class through letter, announcement in the local paper, and email blasts.
Culinary Center of Monterey's program is completed in 12 months in two semesters at six hours per day in the day or evening.
The first five weeks of the culinary arts program's training consists of classroom lectures, demonstrations, and hands on experience in nutrition, safety and sanitation, CPR/Fire Safety/Evacuation/Heimlich, tools and equipments, stewarding, knife sharpening and steeling, product I.D., menu-planning and recipe quantification, cooking techniques, principles and terminology, mise en place, breakfast cookery, and garde manger.
Students get hands on experience in basic baking techniques, sauces, understanding and cooking meats, butchery, charcuterie, vegetable cookery, understanding fish and shellfish, American regional cuisine, ford allergies and new diet types, front of the house, and buffet stations.
Extern program sites include Feast for AIDS Pebble Beach, AT&T Pebble Beach, Cooking for Solutions Monterey Bay Aquarium, Chowder Festival Fisherman's Wharf, Cannery Row Block Party Cannery Row, Concourse D'Elegance Pebble Beach, Opening Night Wine Festival, Monterey Bay Aquarium 16 Hours, Farmers Market, Downtown Monterey, and Meals on Wheels.
Culinary Center of Monterey participate in field trips such as winery tours, sustainable seafood lectures, abalone farms, fishing industry trips, organic farms, and other major American food suppliers.
