All instructors at the Professional Chefs Institute of the South have years of real-world experience and are personally invested in the success of each student. Student-to-teacher ratios at Professional Chefs Institute are kept low to ensure that everyone receives personalized attention and instruction. About 30 individuals are enrolled at the Professional Chefs Institute of the South each year. Academic classes generally have about 30 students, while lab courses never enroll more than 15 students.
Hands-on learning is an important component of the education at the Professional Chefs Institute of the South, and
internships and other practical experience help prepare students for successful careers after they graduate. More than 100 hours of internship are required, including five hours of community service, 10 hours at the front of the house and at the expeditionary station, and 20 hours at various stations in the kitchen (such as the pastry station, sauté station and grill station). Much of this training takes place in the school's on-site, fine-dining restaurant, Primo's Steak and Louisiana Cuisine. The Professional Chefs Institute of the South will assist students and alumni in finding appropriate employment once they complete their studies. Graduates of the Professional Chefs Institute of the South may work in food service positions in hotels, restaurants, cruise lines and casinos.
