San Francisco Baking Institute has trained professional and aspiring bakers throughout the world since 1996. The institute has been the unofficial baking site for several award winning baking USA teams and has hosted international groups who wanted to bring artisan baking back to their homelands. The baking school is recognized for its respect, appreciation, and celebration of artisan baking. San Francisco Baking Institute is the only school in the United States dedicated to artisan bread and pastry.

San Francisco Baking Institute offers five-day bread and pastry workshops and a bread and pastry professional training program. The five-day workshops are comprehensive learning experiences that consist of skills training and intensive production as well as an in-depth understanding of bread and pastry. Workshops include artisan I and II, Advanced breads, breads of the world, fundamentals of pastry, German breads, holiday pastries, pastry I, II and III, viennoiserie, whole grain breads and specialty flours, and whole fired oven.

The bread and pastry professional training program trains students for a rewarding career in the baking industry. Over the course of 20 weeks, students receive extensive training in a variety of areas from functions of bakery equipment and terminology to an optional two-week training in France at one of the most prestigious craft schools in Europe. On the weekends, students travel to Paris and visit numerous bakeries and pastry shops. Students in the bread and pastry professional training program will receive a diploma upon completion of the program.

  • Financial assistance is available for the bread and pastry professional training program. The institute offers loans up to 50 percent of the tuition cost.

The consultants visit bakeries and give advice to bakery owners to make their bakery businesses more efficient, creative, and profitable. Services include on-site consulting, research and development, bakery design and layout, and quality control.
